You can keep your U.S. number on your main line and use the eSIM just for data.
Roaming on your current plan: the easiest. For example, Boost Mobile's Global Connection plan ($40/mo) includes 1GB of data when traveling to 90+ destinations, and Unlimited Premium ($60/mo) includes 5GB in Mexico and Canada.
Travel eSIM: buy a data package for the country you are visiting. Worth it if you need lots of data.
Local SIM: buy a card at your destination. Often cheap, but you have to swap cards.
If you only need messaging and maps, the roaming in your plan may be enough. If you will stream video or use social media all day, compare a travel eSIM.
